THIS DISH IS DISTINCT FROM OTHER THAI CURRIES BECAUSE IT IS PREPARED AS A “DRY CURRY” WITHOUT THE ADDITION OF LIQUID COCONUT MILK, YET WE ADDED A BIT OF MILK, RESULTING IN AN INTENSE, AROMATIC, AND CREAMINESS.
